Sweet Potato Doughnuts

Ingredients
  

Doughnut Base
  • 1 Tbsp instant yeast
  • 1 whole egg + 1 yolk
  • 1/3 cup brown sugar
  • 2 1/4 tsp baking powder
  • 1 1/2 tsp salt
  • 3/4 tsp ground nutmeg For added warmth and flavor.
  • 1 cup milk, lukewarm
  • 1 medium sweet potato puree (from about one medium sweet potato)
  • 6 Tbsp butter, melted
  • 1 tsp vanilla
  • 5 1/2 cups flour
Glaze
  • 3/4 cup cream
  • 2 Tbsp butter
  • 1 1/2 cups sugar

Method
 

Preparation
  1. Combine all ingredients except flour.
  2. Whisk until smooth.
  3. Add flour and knead for 10 minutes.
  4. Place in a greased, covered bowl and allow to rise for about an hour.
Shaping and Rising
  1. Roll out dough to 1/2 inch thick and cut out doughnuts.
  2. Place cut doughnuts and doughnut holes on a greased plate.
  3. Cover and allow to rise in a semi-warm place until doubled in size (about 30 minutes).
Cooking
  1. Heat oil to medium heat (about 350 degrees).
  2. Fry each doughnut a minute or two on each side until cooked.
  3. Place on a plate with paper towels to drain.
Making the Glaze
  1. For the glaze, melt together cream, butter, and sugar.

Notes

Serve in a format that keeps shape and texture visible. Pair with double chocolate cake for a complementary menu flow.
