Preparation
- Make the crepes.
- In a food processor, blend half of the strawberries with the ricotta cheese.
- Add a little sugar or strawberry jam to sweeten to your desired tastes.
Filling and Baking
- Fill the crepes with 2 mini scoops of the ricotta cream mixture, and fold them over on the tops and sides.
- Place them in a greased baking dish, seam side down.
- Bake at 400 degrees Fahrenheit for about 15 minutes.
Making the Sauce
- In the food processor, blend the rest of the strawberries with a little sugar or strawberry jam to make a strawberry sauce.
Serving
- Plate the blintzes and top with a spoonful of strawberry sauce.
- Add a drizzle of cream.
Notes
Serve blintzes warm with strawberry sauce and cream drizzle. Store leftovers in a separate layer for up to 3 days. Use raspberries or mixed berries for a sauce variation.
